Creamy Roasted Red Pepper Potato Soup with Chicken

Creamy Roasted Red Pepper Potato Soup with Chicken 1

Soup weather is officially back! And to kick it off, I’m rolling out my Creamy Roasted Red Pepper Potato Soup with Chicken recipe with its rich flavors and delightful Southwestern flair. Holla, soup season!!!

Every year, the end of summer always bums me out at first, because I heart that fair season with its shimmering heat waves and long, sunlight-laden days.

Vegan Cream of Asparagus Soup

Vegan Cream of Asparagus Soup 1

Because I’m still on an asparagus kick this spring, today’s post features this recipe for Vegan Cream of Asparagus Soup!

Why do I think asparagus is so great, besides being delicious? For one, it’s loaded with beneficial vitamins and minerals, such as folate, Vitamin C, and Vitamin K. And according to an amazing book I read recently called Medical Medium Life-Changing Foods (which I explain more about in the Banana, Wild Blueberry, and Nectarine Smoothie Bowl recipe post), asparagus is alkalizing to the body and helps to battle cancer, inflammation, and nerve issues. HOORAY to that!

And why a vegan version of the soup? Well, I’m not vegan, but I often make vegan or vegetarian dishes because I HEART plants. When I was mentally cooking up this recipe for cream of asparagus soup, I decided to use plant-based methods for making it creamy rather than dairy-based ingredients because as much as it pains me to say it, dairy is NOT my friend at this juncture in my life (it’s never really been; I had to drink soy formula as a baby and experienced several years of intense lactose intolerance as a teen, but I was cool with the dairy for the last decade-plus – until recently. We’re definitely in a spat again.). So I’m trying to eat it sparingly and infrequently.

While I love being sans the dairy side effects, I long for the creaminess it provides to dishes. Enter the DELECTABLY CREAMY Vegan Cream of Asparagus Soup! It contains potatoes and nut butter, two ingredients that I’ve discovered are commonly used in vegan soup recipes as key components in providing plant-based creaminess.

Creamy Potato Soup with Bacon and Fresh Thyme

It’s time for another cozy, yummy comfort food that will make your tummy feel like it’s wrapped in a warm blanket of love and deliciousness! Say hello to Creamy Potato Soup with Bacon and Fresh Thyme!

I’ll never turn down a bowl of hearty soup. It’s one of my favorite food categories ever, right up there with nachos, caprese salads, and anything containing unsweetened raw cacao. So even though the weather here in Metro-Detroit has been absolutely stunning the past week, with multiple blue-skied, sunny days, temperatures in the upper 50s and 60s(!), and spring feels despite it being February, I’m still digging this filling, traditionally cold-weather soup. It’s hard not to with its rich cream base, savory bacon bits, plentiful potato chunks, and plethora of spices including fresh thyme, which is pretty much one of my favorite things right now on account of it’s so lovely.

Spicy Sausage, Barley, and Veggie Soup

Today I have a recipe that’s going to up the cozy factor in your life. Say hello to Spicy Sausage, Barley, and Veggie Soup!

February is most definitely a time for ultra coziness here in Michigan. We are deep in the throes of winter and weeks and weeks of gray and gloom, so I’ll take all of the warm-fuzzies I can get!

Crushed Red Lentil Soup

Hello, all! Happy New Year!!! I hope you had a safe and abundant holiday season full of relaxation, physical and mental recharging, and hopefully lots of cooking and eating of good food.

I’m glad to be back to writing on this blog after an unplanned month-long holiday break. December was a lovely time of connecting with oft-too-little-seen family and friends, enjoying decadent food and drink, and spending more time than usual in my beloved fleece sweatpants. All of the rest, relaxation, and socializing has been great. But I’m ready to get back into the game and give 2017 all that I’ve got!

Creamy Sausage, Potato, and Kale Soup

Hello, all! How are you surviving the increasingly shorter days – you doing OK? I’m speaking to my friends in the Northern Hemisphere, of course. To our friends in the Southern Hemisphere: I hope you are enjoying your summer and all of that gorgeous, brilliant, abundant sunlight! Wave hello to the beach for me.

I, for one, am NOT a fan of the darkness that rules this time of year. If I let it, it will bum me out. Because of this, I’ve been determined since the end of Daylight Savings time to embrace any positive aspects of the longer and longer nights that I can find.

Darkness is . . . cozy. It gives me an excuse to burn candles for hours on end. It gets me to bed earlier, because it feels like stark midnight at six p.m. Looking on the bright side!

And during days when I can’t summon a rosy sentiment about the weakening sunlight, I am hell-bent on wholly distracting myself from it. One majorly reliable way I do that? Making and eating good food, of course! And this Creamy Sausage, Potato, and Kale Soup is pretty darn good, I must say.

Black Bean Garden Soup

One of the best things about fall being here is that it is finally soup weather again! I love me a good soup!

Blazing sunlight and 90-degree temps didn’t stop me from making it here and there this summer. A need to use the chicken stock gleaned from the carcass of a spent rotisserie chicken was the impetus for the first draft of this Black Bean Garden Soup back in August. My fridge’s contents were fairly sparse that night, so I needed to create a recipe out of what was on hand. Happily, I had the chicken stock, onions, a few jalapeños, some black beans I’d cooked up, the last dregs of a jar of minced garlic, and a can of fire-roasted diced tomatoes. I didn’t expect much from this cobbled-together soup, but man, did it turn out delicious!

White Bean and Bacon Soup

I’m OBSESSED with this white bean and bacon soup. Seriously. I’ve made it twice over the last several weeks and plan to make it a third time this weekend. It’s so good!

At the risk of sounding too melodramatic, I must say, this soup has been a beacon of hope during these gray, chilly, rainy/snowy/sleety Michigan spring days, which are driving me half-insane at this point – and somehow making me miss winter, which at least doesn’t pretend to be something it isn’t.

Spring is supposed to be sunshine, blue skies, and flowering cherry trees – and jaunting about in cute new open-toed sandals with a fresh, pretty pedicure!

Spicy Black Bean Soup

This soup is spicy! And I love it. This spiciness is in part because of the curry powder I substituted for cumin, which I had originally planned to use but then discovered I was out of. And the whole jalapeño and cayenne pepper added to it don’t hurt, either!
