The watermelon and mint in this fruit salad are super refreshing, while the lemon juice and zest, honey, and pinch of sea salt give it a nice zing. Bonus points if the honey is raw and organic! Raw honey, I’ve discovered, does have quite a lovely rich flavor – and is said to be loaded with nutrients and immune-boosting goodness.
-3 cups chopped watermelon
-1 heaping cup blackberries
-12 mint leaves, diced
-1 tbs. honey
-Juice and zest from one half of a lemon
-Generous pinch of sea salt
Mix the watermelon, blackberries, diced mint leaves, and lemon juice and zest together well. Drizzle on the honey, sprinkle on the sea salt, and you’ve got yourself a fruit salad! Makes about three servings.
