Recipe creation, for me, often originates from the practical standpoint of “I need to use X and Y and Z before they go bad – what can I incorporate them in?” I’m sure many of you can relate, especially at this time of year, when swoon-worthy produce is everywhere. It’s too easy to buy too much up at once at my beloved neighborhood Italian produce market – it just all always looks so lovely!

This soup is spicy! And I love it. This spiciness is in part because of the curry powder I substituted for cumin, which I had originally planned to use but then discovered I was out of. And the whole jalapeño and cayenne pepper added to it don’t hurt, either!

I felt like Adam Sandler in Billy Madison when he tells his first-grade teacher, Miss Lippy, why he colored a blue duck: “I made the duck blue because I’d never seen a blue duck before and I wanted to see one.” Yeah, that’s a random allusion, but it is so stuck in my head in connection with this salad!

My mom was the inspiration behind this pasta bake (hi, Mom!). She was telling me the other day about this quick lasagna she made using premade spinach ravioli, and I thought, hmmm, I can do a whole-eating upgrade on that!
