In case you haven’t noticed yet, I love making dips! Specifically, I love making dips from beans; they’re just such a great base! They’re healthy and a great source of fiber and protein. And white beans, such as northern or cannellini or navy beans, are so mild that they are quite versatile in dip-making; you can pair them with so many different flavors.

These meatballs are so, so, so addictively delicious, if I do say so myself! Try not to stand there and eat several right out of the pan when you first take them out of the oven like I did!

Spicy Black Bean Soup

This soup is spicy! And I love it. This spiciness is in part because of the curry powder I substituted for cumin, which I had originally planned to use but then discovered I was out of. And the whole jalapeño and cayenne pepper added to it don’t hurt, either!

This lentil and bulgur bowl makes it so deliciously easy to eat whole and healthy. I love the brightness the lemon adds! And it’s vegan.

Mmmmm, soft serve – always a delicious summer treat, but not something you’d want to indulge in every day of the week (remember that Seinfeld episode where that non-fat frozen yogurt they were obsessed with turned out to be anything but? Ha, ha, classic.). Unless that soft serve happens to be totally made from fruit – hello, banana-cherry soft serve!
