It’s with a great deal of nostalgia that I present this recipe I created and photographed a couple of months ago. Because Lamb Burgers with Sauteed Onion and Garlicky Feta Sauce and Garlic- and Thyme-Tossed Fries are not literally in my house right now, as I work to heal a health issue that’s greatly restricted what I eat for the last month and counting. I don’t know when they’ll be allowed back in my house, but I’m hopeful it will be soon – and I’m more food obsessed than ever!

All the mincing and measuring of herbs and from-scratch creation of the various components (the sauteing of the onions; the melding of the feta sauce; the slicing of potatoes into matchstick-shaped fries) takes time. This recipe is perhaps better suited for making on a leisurely day off than it is on a post-work week night (though both times I’ve made it, I’ve made it on a week night. So it’s not impossible – just a tad tiring once you get to clean-up!).

But through the magic of prep work, you can make Lamb Burgers with Sauteed Onion and Garlicky Feta Sauce and Garlic- and Thyme-Tossed Fries easier to cook by performing these actions the day prior:

  • Mincing the garlic and herbs
  • Preparing the feta sauce

Another substitution you should please feel free to make: swapping the lamb for ground turkey or beef. I know lamb is not for everyone – and it can be pretty dang pricey. I actually made the first draft of this recipe with ground turkey for that very reason!

Already rich lamb burgers are up-leveled by sauteed onion shimmering with flavor and a delectably creamy, garlicky feta sauce. Homemade fries tossed in garlic and fresh thyme further up the ante!

Ingredients

Fries:

  • 8 russet potatoes, peeled and sliced into fry shapes (matchsticks)
  • 2 tbs. cooking oil with a high smoke point, such as grapeseed
  • 2 tbs. minced garlic
  • 2 tbs. fresh minced thyme leaves
  • 1 tsp. salt
  • 1 tsp. black pepper

Garlicky Feta Sauce:

  • 1/2 cup feta cheese
  • 1/4 cup full-fat Greek yogurt
  • 1 tsp. minced garlic
  • 1/2 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. red pepper flakes
  • 1/8 tsp. oregano
  • 1/8 tsp. ground coriander

Sauteed Onion:

  • 1 large yellow onion, chopped
  • 1 tbs. cooking oil

Lamb Burgers:

  • 1 lb. ground lamb
  • 2 tsp. minced garlic
  • 2 tsp. minced fresh flat-leaf parsley leaves
  • 2 tsp. minced fresh thyme leaves
  • 2 tsp. minced fresh tarragon leaves
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • Cooking oil in pan as needed
  • 4 hamburger buns
  • 1 large tomato, sliced

Instructions

  1. Preheat oven to 400 degrees. Toss potato sticks with the oil, garlic, thyme, salt, and pepper. Spread out on a baking sheet and bake until crispy, about 35 to 40 minutes (flipping fries halfway through to ensure even cooking).

  2. Prepare the feta sauce by adding all of its ingredients to a food processor or blender and processing until smooth. Refrigerate until burgers are ready to assemble.

  3. Sauté the onion by adding it with the oil to a pan over medium heat. Cook, stirring frequently, until softened and browned, about 10 to 12 minutes.

  4. Mix the ground lamb meat with the garlic, parsley, thyme, tarragon, salt, and pepper. Form into four equally-sized patties. Swirl cooking oil around a frying pan; add the burgers and cook over medium-high heat to your desired doneness, flipping halfway through the cooking process. Reduce heat and/or add more oil to the pan as needed. Five minutes of cooking on each side should yield a medium (pink in the center) burger.

  5. Nestle each lamb burger in a hamburger bun, topping it with feta sauce, a tomato slice, and sauteed onion. Serve with the fries – and savor the delicious results of your hard work!
