I know Taco Tuesdays are all the rage – and for good reason. Tacos are AWESOME, and Tuesdays deserve to be spiced up. I mean, “Party Animal” wasn’t the moniker that immediately came to mind for me around that day of the week before Taco Tuesday became a thing, but now I’m all like, “Tuesdays, you’re so crazy!” Still, I like the idea of tacos being a Friday food, because in my mind they are a celebratory food, and Friday is a celebratory day for me on account of it means a two-day break from my cube-rat corporate day-job existence (who feels me???). So I hereby denote these Spicy Chickpea Tacos an Honorary Friday Food. [Cue the confetti!!!]
Happy Monday, all! Today we have another recipe for a simple, flavorful salad. Drumroll please for: Strawberry Arugula Salad with Blood Orange Vinaigrette!
OK, so this salad sounds sups fancy because it has ingredients much more exotic than the stereotypical wah-wah iceburg salad with its watery leaves and cucumber and tomatoes and croutons and ranch. I mean, for one, it’s got a dressing that contains the juice of blood oranges.
OK, I know Mondays aren’t especially happy for many of us. I hear you! But you know what will make your Monday so, SO much better? A whole chicken just out of the oven, all golden and crispy-skinned, on a bed of potatoes and onions tender-roasted in the drippings – YUMMMMM.
There are few things better in life, in my opinion, than fresh-roasted chicken. I stand over it at the stove, ripping pieces off of the still piping-hot bird, burning my fingers, dipping the pieces in the buttery pan drippings . . . THE BEST.
It’s getting warmer, you guys! Spring has arrived to the Northern Hemisphere! Huzzah!
Here in Southeast Michigan, the early days of spring can often feel like what I’ve termed “Winter Lite.” Consistently warmer weather can take a while to get here; snow – at least a few whimpering, amount-to-nothing flakes – can be expected as far into spring as the end of April. So hearty meals such as this spicy sausage and sweet potato chili are still on the agenda for me.
I pride myself on being someone who is passionate about clean eating. But I’m far from perfect; standing before the stove, it’s a nightly struggle between clean and convenient – which, as I hope I am illustrating with this blog, are certainly not mutually exclusive! But sometimes even I give in to the corporate food giants’ mythical siren song extolling the virtues of prepared food convenience – aka sometimes I’m short-sighted and forget to plan!
