I love healthy foods because they make me feel good, all sharp-brained and physically energized. And I love delicious foods because, well . . . that’s pretty self-explanatory! I’m regularly on the lookout for ways to combine both qualities into one recipe. So it’s no surprise that Carrot Cake Energy Balls are a melding of tasty-yet-good-for-you stuff: fruits, veggies, nuts, seeds, spices, and natural sweetener.
I’m so excited to unveil today’s recipe for Apricot-Date Energy Balls! They are nutrient-dense, ridiculously delicious, processed-sugar-free and gluten-free little beauties! And they are so, so easy to make – just let that food processor or blender do all of the work!
If my seasonal allergies are any indication, spring is OFFICIALLYÂ here! And with spring comes all of the wonderful, glorious outdoor activities that those of us in cold-weather climes miss out on in the winter, so YAYYYY!!!

Having a Monday-through-Friday day job in corporate America (for now, at least!) that doesn’t quite vibe with my personal interests, I very much savor the weekend, a.k.a. Real Life, as I call it. During Real Life time, I have the space to do all of the stuff that my heart sings at doing, such as developing recipes for this blog (utilizing the precious daylight that is so scarce this time of  year and oft missed when I’m corralled inside my cubicle), visiting new restaurants with my pals, and dozing off in front of the TV in my fleece sweatpants (seriously one of my fave pastimes. I am not a napper except when it’s dark and I’m in front of a TV). And snacking – lots and lots of unbridled snacking.
With spring finally here and the snow hopefully melted where you are, it’s time again for running/outdoor exercise season. You need snacks that are portable, tasty, and provide some serious fuel – which means energy bars for most people. Those are healthy, right?
